Ingredients:
1/2 white onion, thinly sliced
3 tbsp olive oil
1 tbsp butter
4 cloves garlic
1 tsp Calabrian chili flake
1 4.9 oz can of tomato paste
1/4 c vodka
1/2 c heavy cream
1/2 c water
20 g parmesan cheese
1/4 tsp salt
Sautee onion in olive oil and butter until translucent, add garlic and cook until softened. Add Calabrian chili, and tomato paste, cooking the tomato paste in the oil for 5 minutes, stirring frequently. Add the vodka, bring to a boil and then lower the heat cooking for another 5 minutes until the vodka has reduced somewhat. Add the heavy cream, water, parmesan cheese, and salt to taste, stirring to combine and heated through. Enough for 1 lb cooked dry pasta.
