Shrimp and Grits

Ingredients:
1 c dry grits
4 c water or broth
3 tbsp butter
1/4 c heavy cream
4 oz sharp cheddar
1 lb shrimp, peeled
1 tsp salt
1 tsp sugar
1/4 tsp baking soda
2 tbsp salt free bbq seasoning
3 tbsp butter

Bring grits and water or broth to a boil and then simmer for 20 minutes. Add 3 tbsp butter, heavy cream and cheese and simmer until combined.  Dry brine shrimp in salt, sugar and baking soda for 30 minutes. Rinse thoroughly. Mix with bbq seasoning and sautée in remaining butter until just cooked through.  Serve shrimp over grits spooning over remaining liquid.
