Pork Belly

Ingredients:
3 lb pork belly
15 g kosher salt
10 g sugar
1 tsp black pepper

Mix salt, sugar and pepper and coat pork belly in mixture, leaving to marinate for 24 hours.  Cook pork belly in instant pot for 1 hour. Bake pork belly at 400F for 30 minutes. Let cool and slice as needed.
