Ingredients:
1 lb shrimp, peeled
1 tsp salt
1 tsp sugar
1/4 tsp baking soda
Dry brine shrimp in salt, sugar and baking soda for 30 minutes. Rinse thoroughly. Poach in water that is simmering at 175 degrees for 3 minutes (including the time it takes to bring the water back up to temperature). Place the shrimp directly into ice water to stop cooking. Use for shrimp cocktail or shrimp rolls.
