Paella

Ingredients:
2 tbsp olive oil
1/2 onion
3 cloves garlic
2 tbsp tomato paste
2 tsp smoked paprika
1 c bomba rice
2 c chicken stock
large pinch saffron
1 link sausage
1 lb assorted meat, seafood or vegetable

Heat chicken stock with saffron. In a separate pan, sautee onion and garlic in olive oil until softened. Add diced sausage and cook through. Add tomato paste and paprika and cook until tomato paste is no longer raw. Add rice and mix until fully coated and toasted. Add chicken stock and bring to a boil, stirring and then lowering the heat to a simmer. Let simmer for 15 minutes, covered and then add the meat, seafood or vegetable on top, and continue to cook for 7 minutes. Turn off heat and allow paella to rest for 10 minutes.
