Ingredients:
65 g AP flour
3/4 c milk
1 tsp yeast
1 tbsp sugar
65 g AP flour
1 tsp baking powder
1/4 tsp salt
1 large egg
2 tbsp olive oil
2 tbsp maple syrup
2 tbsp honey
2 tbsp butter
1/4 tsp salt
Heat milk to 110-115F and mix with yeast and sugar and let sit until yeast is activated. Mix with flour, and leave to proof for 1 hour. Mix proofed mixture with flour, baking powder, salt egg and oil, until the batter just comes together. Pour 1/3 of the batter into a 6-inch cast iron pan, lightly greased with oil and pre-heated, cooking on each side for roughly 2-3 minutes. (The pancakes will be golden on both sides and only need to be flipped once). Mix honey, butter, syrup and salt, and serve pancakes with honey butter mixture.
