Ingredients:
400 g fruit
1/4 c brown sugar
1/2 tsp cinnamon
1 tsp lemon juice
1 tsp corn starch
70 g AP flour
1/4 c sugar
1/2 tsp baking powder
3 tbsp butter
3 tbsp milk
Prepare fruit, and cook with sugar, cinnamon, lemon juice and corn starch until the peaches are soft and have given up their liquid. Place into a 1 qt baking dish. Mix the flour, sugar and baking powder together. Cut butter into small cubes and rub into the flour mixture until incorporated. Add milk mix until the batter just comes together. Drop quenelles of the batter over the peaches, and bake at 350 F for 40 minutes.
