Fly’s Head

Ingredients:
1 lb ground pork
1 tbsp black bean paste
1 tbsp soy sauce
3 garlic cloves
1 knob ginger
2 tbsp shaoxing wine
2 c finely chopped chives
1/2 red pepper, finely diced

Cook ground pork, breaking up pork into small pieces, and set aside. Finely mince garlic and ginger and sauté with red pepper in oil. Add back ground pork, black bean paste, soy sauce and shaoxing wine, mixing until pork is well coated in sauce. Mix in chopped chives and cook until chives are just warmed. Serve over rice.
