Ingredients:
400 g AP flour
1/2 tsp salt
1/2 tbsp sugar
2 tsp yeast
300 ml warm water
3 tbsp oil
Mix all dry ingredients. Heat water and sugar to 110-115F, and proof with yeast. Add water and 1 tbsp oil to dry ingredients and mix for 5 minutes. Let proof for 1 hour until doubled in size. Push the dough mixture into a Lloyd pan, pushing dough to the edges, and let sit for another 30-45 minutes for second proof. Ensure dough has expanded to edges, and add 2 c mozarella and cheddar mix. Bake pizza at 400F for 21 minutes. While pizza is baking, make a thick pizza sauce. Take pizza out of the oven, letting rest for 10 minutes. Cut into slices, and serve with a dollop of sauce on each slice.
