Ingredients:
300 g bread flour
2 tbsp potato starch
200 g boiling water
2 tbsp oil
Mix all ingredients together, at first with two chopsticks (because the water is hot), and then kneading by hand until a smooth dough develops. Let rest for 1 hour. Makes 32 dumplings with a medium scoop (3 tbsp) filling.
Cut dough into 4 sections, and roll each into a log, cutting each log into 8 pieces. To roll, dust a piece of dough on each cross-section and roll (with cross-section facing down) into a circle 4-5 inches wide.
