Ingredients:
40 g minced ginger
80 g minced scallions and/or garlic
1 tsp salt
1/2 c olive oil
1.5 lb chicken thigh
Place all ingredients in a pan and heat until gently simmering for 5 minutes. Let cool and set aside. Place chicken thighs in a pot with enough water to cover and simmer for 15 minutes until tender. Serve chicken with ginger scallion sauce and rice.
