Chicken and Dumplings

Ingredients:
250 g AP flour
2 tsp baking powder
2/3 c milk
1/4 c olive oil

1.5 lb cooked chicken breast
2 tbsp olive oil
1 c chicken broth
1 c milk
2 tbsp flour
1 tsp potato starch
2 carrots
2 celery ribs
2 cloves garlic
1/2 yellow onion

Sautee onion, garlic, carrots and celery in olive oil until softened. Add flour and saute until flour is cooked through. Add milk and chicken broth, mixed with potato starch, bringing to a boil and then simmering until thickened. Add cooked chicken breast and stir until warmed through. Mix biscuit materials (olive oil, milk, baking powder and flour) until the dough just comes together, and then scoop the dough over the stew. (Using a large scoop, should be able to make 6 biscuits). Cover and cook for 20 minutes until the biscuits have risen and cooked through.
