Ingredients:
90 g carrot
90 g sugar
1 egg
1/3 c olive oil
90 g AP flour
1 tsp baking soda
Blend carrot, sugar, egg and olive oil until fully blitzed. Mix flour with baking soda, and then mix with carrot puree. Pour into 6-inch baking dish and bake at 350F for 30 minutes.
