Ingredients:
8 tbsp butter
100 g sugar + 4 tbsp sugar
2 tbsp water
1/4 tsp cinnamon
1 large apple or stone fruit, cut into 8 pieces
2 eggs
1 tsp vanilla
70 g AP flour
1/2 tsp baking powder
Grease 6-inch cake pan. Over skillet, melt 1 tbsp, and add 4 tbsp sugar, water and cinnamon. Bring the mixture to a simmer, and add apple wedges, lowering heat to low. Cook for 8 minutes, flip apples, and cook for another 8 minutes until a thick syrup is created. Melt the remaining 7 tbsp butter and pour into a bowl with 2 eggs, whisking until thoroughly combined. Add the 100 g sugar, vanilla, and whisk to combine. Add the flour and baking powder, and fold until just combined. Place apple wedges and syrup at the bottom of cake pan, and top with the batter. Bake at 350 F for 40 minutes, letting cool for 10 minutes, before flipping the cake onto a plate.
