Ingredients:
2 c soy sauce
1 c brown sugar
1/2 c water
2 star anise
2 cinnamon sticks
2 black cardamom pods
2 tsp sichuan peppercorn
4 stalks scallion
10 slices ginger
4 bay leaves
1 tsp fennel seed
Combine on bring to a boil, then lowering to a simmer until the sauce begins to foam up. Let cool. Should make a little over 1 cup of seasoned soy for a variety of dishes. Keep refrigerated.
