Beijing Meat Pies

Ingredients:
330 g AP flour
200 ml water
1 tbsp oil
1 lb ground meat
1/4 c oil
1/4 c oyster sauce
1/4 c chicken stock
1/2 onion
1 egg

Mix flour, 150 ml of hot water and 1 tbsp oil until combined, then add remaining 50 ml of cold water.  Let dough rest for 30 minutes.  Mix ground meat with oyster sauce and stock, and then mix in oil until fully combined.  Mix in onions.  Divide dough into 8 sections and dust well with flour.  Roll into a 7-8 inch round, and fill with 1/8 of the mix, pleating the top to make a flat 4-5 inch meat pie.  Sautée in oil, flip after 2 minutes for a total of 8 minutes.
