Ingredients:
250 g black beans, soaked overnight
8 cloves garlic
3 bay leaves
1 tsp epazote
1/2 medium onion, chopped
4 tbsp butter or oil
Soak beans overnight and cook for 20 min. with 3 cups of water and 4 cloves of garlic in an InstantPot on High, letting release pressure naturally. Blend beans into a puree, adding a bit of water if needed. Sautee butter with onions and remaining garlic, and add puree, cooking for at least 15 minutes. Serve with butter, sour cream and cheese.
